The Potato Latke (potato pancake) is probably the best known Chanukah food. The oil that the latkes are fried in is a reference to the oil in the story of Chanukah that lasted eight days rather than just one. Potato Latkes are made of shredded potatoes that are generally mixed with onions and some egg to hold the mixture together. Once the latkes are cooked, they are generally served with apple sauce and sour cream. A definite favorite for the Chanukah season!
